                Lo&#111&#107&#105ng through my baking recipes, I realize that the S&#112&#114&#105<input type="hidden" />tz cookies that I baked for Christmas was quite th&#101&#32&#104it. Just before going home <input type="hidden" />for the holidays, I was&#32&#116&#104inking all sorts of festive cookies I used to have&#32&#105&#110 <input id="counter" type="hidden" />Malaysia, particularly melt in your mouth cookies&#44&#32&#101g. Butter cookies, Sugee coo<input id="counter" type="hidden" />kies and Cornstarch co&#111&#107&#105es. So, I decided to whip up a small batch of my v&#101&#114&#121 o<s></s>wn ‘<span class='wp_keywordlink_affiliate'><a href="http://www.chinesefoodculture.com/archives/tag/melting" title="View all posts in Melting" target="_blank">Melting</a></span> <span class='wp_keywordlink_affiliate'><a href="http://www.chinesefoodculture.com/archives/tag/moments" title="View all posts in Moments" target="_blank">Moments</a></span>’ to satisfy my cravings.&#32&#73&#32did not get to share this won<input id="apps" type="hidden" />derful and simple rec&#105&#112&#101 as I was busy preparing to fly home. Now that I h&#97&#118&#101 a <input id="tracker" type="hidden" />chance to, I must say my version of <span class='wp_keywordlink_affiliate'><a href="http://www.chinesefoodculture.com/archives/tag/melting" title="View all posts in Melting" target="_blank">Melting</a></span> Mom&#101&#110&#116s comes closest to just the wa<input type="hidden" />y I like it.</p>
<p>
      &#32&#32&#32         If you have not had a chance to savor the&#115&#101&#32deli<input id="apps" type="hidden" />cate treats that I am going on about, ‘Melti&#110&#103&#32<span class='wp_keywordlink_affiliate'><a href="http://www.chinesefoodculture.com/archives/tag/moments" title="View all posts in Moments" target="_blank">Moments</a></span>’ are aptly named for <input type="hidden" />their buttery short&#98&#114&#101ad-like texture. Trust me, it really melts in your&#32&#109&#111uth a<input id="stats" type="hidden" />s it titillates your every taste bud. After b&#114&#111&#119sing variations of these delight<s></s>ful cookies over t&#104&#101&#32net, I am inspired to get my ‘joy of baking’ m&#111&#111&#100 on. A<input id="tracker" type="hidden" />nd with ingredients that are so easy to come&#32&#97&#99ross, it’s easily inspiring to <input id="phpint" type="hidden" />bake some of my o&#119&#110&#32<em>best</em> <strong><span class='wp_keywordlink_affiliate'><a href="http://www.chinesefoodculture.com/archives/tag/melting" title="View all posts in Melting" target="_blank">Melting</a></span> <span class='wp_keywordlink_affiliate'><a href="http://www.chinesefoodculture.com/archives/tag/moments" title="View all posts in Moments" target="_blank">Moments</a></span></strong> ever.

     &#32&#32&#32       <s></s>   For a velvety smooth and fluffy, crumbly&#32&#99&#111okie that is totally irresistible,<input id="apps" type="hidden" /> the key ingredi&#101&#110&#116s are substituting cornstarch (cornflour) with pot&#97&#116&#111 starch <input type="hidden" />for the light and fluffy texture, cake flo&#117&#114&#32for a soft finishing touch and real<input type="hidden" /> butter for the&#32&#119&#111nderful flavor.

1 12-oz can diced tomatoes<br />
1/4&#32&#99&#117p celery, chopped<br />
1 small o<input id="phpint" type="hidden" />nion, chopped<br />
2 cloves &#103&#97&#114lic, chopped<br />
1/2 tsp anchovy paste or 1 tsp mashed&#32&#97&#110c<s></s>hovies<br />
1 tbsp olive oil<br />
1 cup red wine<br />
1 cup vege&#116&#97&#114ian, beef or seafood stock<br />
1<input id="stats" type="hidden" /> tsp cornstarch</p>
<p>1 tbsp&#32&#99&#104ipotle hot sauce (Tabasco brand)<br />
1 tbsp lime juice<br />&#10&#49&#32ts<input id="apps" type="hidden" />p paprika<br />
1 pinch saffron</p>
<p>1/4 lb mixed seafood, &#99&#108&#101aned, cut to bite size (shrim<input id="tracker" type="hidden" />p, mussels, octopus, &#102&#105&#115h. This is sometimes available in frozen mix packa&#103&#101&#115.)<br />
<input type="hidden" />1 can smoked baby clams, drained</p>
<p>To taste: Crus&#104&#101&#100 red pepper, cayenne pepper, s<input type="hidden" />even-pepper blend, g&#97&#114&#108ic salt<br />
2 whole bay leaves, fresh parsley, basil, &#97&#110&#100 mar<input type="hidden" />joram</p>
<p>Heat the olive oil in a pot and sauté c&#101&#108&#101ry and onion in it for about 4 <input id="apps" type="hidden" />minutes or until so&#102&#116&#46 Add the garlic and sauté for another minute, the&#110&#32&#97dd th<input id="apps" type="hidden" />e tomatoes (drained, reserving the water) and&#32&#116&#104e anchovies. After 5 minutes add<input id="counter" type="hidden" /> the tomato water &#97&#110&#100 the wine. Add the bay leaves. Simmer for 15 minut&#101&#115&#32or unt<input id="apps" type="hidden" />il it&#8217;s reduced to soup consistency, then add the stock an&#100&#32&#114educe again. </p>
<p>Place saffron on a <input id="tracker" type="hidden" />small piece of ba&#107&#105&#110g paper and toast it in the oven for about 2 minut&#101&#115&#46 (If it<input id="tracker" type="hidden" /> turns black and bitter, discard.) Powder w&#105&#116&#104 your fingers into the stew, then <input id="apps" type="hidden" />add the hot sauc&#101&#44&#32the lime juice, and all the seasonings and spices.&#32&#73&#32go heavy<input id="counter" type="hidden" /> on the hot sauce myself.</p>
<p>Thaw the fresh o&#114&#32&#102rozen seafood in the fridge or unde<input id="counter" type="hidden" />r a running (co&#108&#100&#41 tap. Remove the bay leaves from the stew with a s&#112&#111&#111n. Add th<s></s>e seafood to the stew, stir once, and coo&#107&#32&#102or 5-7 minutes or until the seafood <input id="tracker" type="hidden" />is done. Disso&#108&#118&#101 the cornstarch in 1 tsp warm water, then stir int&#111&#32&#116he stew. </p>
<p><input id="apps" type="hidden" />Serve with garlic rolls.</p>

Every De<input id="tracker" type="hidden" />cember, I wait excitedly&#32&#102&#111r the pomegranates to arrive at my grocery store. &#73&#32&#112<input id="apps" type="hidden" />urchase several and place them in my prettiest bow&#108&#44&#32simply to admire their gorg<input id="stats" type="hidden" />eous, shiny, red leathe&#114&#32&#115kins. Then, I pick one. I quarter it and put the q&#117&#97&#114t<input id="tracker" type="hidden" />ers into a separate bowl in the sink. Some people&#32&#115&#117bmerse them in water to remo<input type="hidden" />ve the seeds in order &#116&#111&#32avoid the spray, but I like to collect the juice i&#110&#32&#109y <input id="tracker" type="hidden" />bowl, so I can sip it later. I carefully remove &#116&#104&#101 clusters of seeds from the p<input id="apps" type="hidden" />ith and fill a bowl w&#105&#116&#104 beautiful, plump, juicy red teardrops. They look &#108&#105&#107e l<input id="stats" type="hidden" />ittle garnet gems. They glisten. And they taste&#32&#115&#117blime: sweet, tart and purely <input id="stats" type="hidden" />pomegranatey. Pomegr&#97&#110&#97te season makes my whole December.</p>

1/3 cup chopped fresh cilantr&#111&#44&#32packed<br />
1 cup shredded low-fa<input type="hidden" />t Monterey Jack cheese<br />&#10&#54&#32corn tortillas<br />
cooking spray<br />
low-fat sour cream<br />

<p>PREPARATION:<br />
Add olive oil, onion, garlic, &#106&#97&#108apeno and cumin seed to a lar<input type="hidden" />ge pot over medium he&#97&#116&#44 stir constantly for 5 minutes. Add corn, vegetabl&#101&#32&#98rot<input id="tracker" type="hidden" />h, beans and cilantro.</p>
<p>Reduce heat, cover and s&#105&#109&#109er for 10 minutes.</p>
<p>Heat oven t<input id="apps" type="hidden" />o 450 degrees. Coat &#99&#111&#111kie sheet with cooking spray, place tortillas on s&#104&#101&#101t an<input type="hidden" />d spray tortillas with cooking spray. Cook app&#114&#111&#120imately 10 minutes. Cut tortill<input id="stats" type="hidden" />as into strips.</p>
<p>Top&#32&#115&#111up with cheese, tortilla strips and a dollop of so&#117&#114&#32cream<input type="hidden" />. Garnish with lime.
