Confucius literally "Master Kong," (traditionally September 28, 551 BC – 479 BC) was a Chinese thinker and social philosopher.
His philosophy emphasized personal and governmental morality, correctness of social relationships, justice and sincerity. These values gained prominence in China over other doctrines, such as Legalism or Taoism during the Han Dynasty (206 BC – 220 AD). Confucius’ thoughts have been developed into a system of philosophy known as Confucianism. It was introduced to Europe by the Italian Jesuit Matteo Ricci, who was the first to Latinise the name as "Confucius."
Although Confucianism is often followed in a religious manner by the Chinese, arguments continue over whether it is a religion. Confucianism does not lack an afterlife, the texts express simple views concerning Heaven, and is relatively unconcerned with some spiritual matters often considered essential to religious thought, such as the nature of the soul.
Confucius’ principles gained wide acceptance primarily because of their basis in common Chinese tradition and belief. He championed strong familial loyalty, ancestor worship, respect of elders by their children (and, according to later interpreters, of husbands by their wives), and the family as a basis for an ideal government. He expressed the well-known principle, "Do not do to others what you do not want done to yourself" (One of the earliest versions of the Golden Rule). He also looked nostalgically upon earlier days, and urged the Chinese, particularly those with political power, to model themselves on earlier examples.
Because no texts survive that are demonstrably authored by Confucius, and the ideas most closely associated with him were elaborated in writings that accumulated over the period between his death and the foundation of the first Chinese empire in 221 BC, many scholars are very cautious about attributing specific assertions to Confucius himself.
“Emergency Peanut butter Cookies”

Don’t forget, the longer you leave them in the oven, the crispier they will be… So it depends on how you like them really.
Ingredients:
* 1 cup peanut butter (works with all kinds. The better quality the PB, the better quality the cookie, but cheap store brand works just fine.)
* 1 cup sugar (I used Splenda when I was low-carbing and it works fine.)
* 1 egg
* 1 tsp. vanilla extract
Mix it all together. Roll into balls. Put on greased cookie sheet and flatten with a fork in the traditional criss-cross pattern. Bake at 350°F (175°C) forಊ-12 minutes or until slightly browned. (Watch them carefully so they don’t burn, but don’t take them out too early either.) … If you let them cool a bit, they’ll become crisper and easier to pick up. They have a nice chewy texture. (Don’t forget the glass of milk!)

Japchae (also spelled as chap chae) is the first Korean dish I tried. Believe it or not, before I came to the United States, I had never had Korean food. Growing up in Malaysia with all its glorious local cuisines and family’s home cooking, I seldom tried other cuisines…plus there weren’t many international restaurants back then.
I first had Japchae when I lived in San Francisco. I fell in love with the springy and slightly chewy texture of the japchae noodle, which is made from sweet potato. Korean food was new to me, the taste—especially the dishes with lots of heat—reminded me of Malaysian cuisine, but it’s completely different and interesting…
Korean cooking is currently high on my priority list. Even though I enjoy Korean food tremendously, I am a novice but I have been cooking a lot of Korean dishes lately. Please stay tuned as I am going to expand the Korean recipes category with kimchi fried rice, Korean pancakes, bulgogi, and more. Anyway, here is my japchae (chap chae) Recipe, which is easy and takes only 30 minutes to prepare. Enjoy!
Japchae (ChapChae) Recipe
Adapted from The Steamy Kitchen Cookbook & The Korean Table
Serves 2
Ingredients:
8 oz noodles
4 oz spinach
1 1ǘ tablespoons oil
2 cloves garlic, minced
1/2 small onion, thinly sliced
3-4 dried shiitake mushrooms, soaked in warm water, stem removed and sliced
1 small carrot, cut into thin strips
1 stalk scallion, cut into 1-inch lengths
1/2 tablespoon sesame oil
Salt to taste
1 heaping teaspoon toasted white sesame
Cook the sweet potato noodles in a large pot of boiling water for about 5 minutes. Drain the water and rinse the noodles under cold running water. Cut the noodles using a pair of scissors into about 6-inch lengths. Set aside.
Heat up a pot of water and bring it to boil. Blanch the spinach until they are wilted, about 1 minute. Drain the water and rinse the spinach under cold running water. Form the spinach into a ball and squeeze it to discard the remaining water. Cut the spinach ball into half.
Heat up the oil in a skillet or wok and add the garlic, onion, mushroom, and carrot and cook for about two minutes. Add the scallion and stir-fry for another minute. Turn the heat to low and add the noodles and spinach into the skillet or wok, follow by the sesame oil, the Sauce, and salt to taste. Stir to combine well. Dish out, sprinkle with the sesame seeds, and served at room temperature.

The japchae noodles can be found at Asian supermarkets. They are usually labelled as sweet potato noodles.

Dashi, yuzu, kombuingredients that were once alien to non-Japanese chefs are now vital components of haute cuisine and fine dining.
As a result of the wild popularity of Japanese cuisine, its ingredients are taking more shelf space in many food stores as more people venture into Japanese cooking at home. I am a huge fan of Japanese food and have been learning and making Japanese food at home. Over the years, I have learned that cooking Japanese food is not hard; in fact, it’s quite easy as soon as you grasp the fundamentals of Japanese cooking: the basic ingredients, the cooking techniques, tips, traditional methods, and preparation. So, to help you learn Japanese cooking, I have put together this page as an overview of the essential ingredients and the cooking tips that define Japanese cuisine…
Ponzu
Ponzu is a fundamental flavoring sauce in Japanese cuisine that oozes umami and great flavor. Made with soy sauce, citrus juice and vinegar, Ponzu has many culinary uses. Every summer, I use Ponzu for my grilled foods, from meats, seafood, chicken to mushrooms and vegetables. Other culinary usage are:
Dipping sauce for sushi, sashimi, gyoza (Japanese) dumpling, shabu-shabu (Japanese hot pot).
Marinade for meat, fish, shellfish, tofu, and vegetables before grilling.
Salad dressing. Use ponzu alone or mix it with mayonnaise, salad dressing/oil for a unique flavor.
Pour-over sauce for meat, fish, shellfish, tofu, and vegetables. I especially love Ponzu with oily fish such as salmon and yellow tail. The citrusy flavor cuts the grease and rids the fishy smell to deliver a cleaner taste.
Flavoring sauce for steamed dishes, for instance: fish, chicken, pork, or tofu.
A good brand of ponzu such as Mizkan AJIPON® Ponzu can even be used as a soy sauce replacement and delivers amazing and authentic result to many traditional Japanese dishes. The sodium level of Mizkan AJIPON® Ponzu is also much lower than that of soy sauce (370 mg per tablespoon vs. 920mg), hence reducing the sodium intake drastically.
Dashi
Dashi is the building block of Japanese cookingâa fish-based stock made of dried shaved bonito flakes and kombu (seaweed). It’s used in almost all Japanese dishes, from soups, sauces, to steamed dishes such as chawanmushi (Japanese egg custard). While you can make home-made dashi stock in less than 30 minutes, many home cooks, including those in Japan, are turning to premium quality soup base for convenience because there is dashi in the soup base.
Cooking Tips for Dashi-based Sauces
There are many different types of sauces in Japanese cooking, some are thick while others are watery. If you use a bonito-flavored soup base, for example: Mizkan (Bonito Flavored) Soup Base, you can make various sauces by changing the ratio of water added to the soup base, for examples:
if you add water by 1:8.5 (one soup base and 8.5 water), you can make the soup base for Japanese hot udon or soba noodle.
If you add water by 1:3 (one soup base and 3 water), you can make the dipping sauce for Japanese cold soba or somen noodle.
If you add water byŁ:5 (one soup base and 5 water), you can make the dipping sauce for tempura.
Soup base is also very versatile and can be used as a flavoring sauce for the following:
Teriyaki Sauce for chicken, beef, or salmon
Simmered dishes such as braised shiitake mushroom
Soup base for Japanese hot pots such as nabe
Barbeque marinade for meat, fish, and seafood
Dashi-no-moto (dashi powder) substitute
Mizkan (Bonito Flavored) Soup Base is a magical condiment, one that I stock up in my pantry.
Mirin
Mirin, or fermented sweet wine made from steamed glutinous (sticky rice) is used in many Japanese dishes. Mirin has a mild alcoholic aroma and it’s slightly sticky in the texture. Mirin adds a subtle sweetness to sauces such as teriyaki sauce and sukiyaki sauce. It also enhances the flavor of many simmered dishes.
Mirin is usually added toward the end of the cooking process. When shopping for Mirin, always look for naturally brewed Mirin (hon-mirin) instead of the artificially blended Mirin flavoring (mirin-fuhmi). I like MIZKAN HONTERI® Mirin Seasoning which is a no alcohol Mirin, which keeps well in the refrigerator, or in a cool place away from direct sunlight.
Rice Vinegar
Rice vinegar is the key flavoring medium in sushi rice, a staple in Japanese cooking. It’s also widely used in Japanese salad, pickled ginger, and in many dishes to add depth to the overall taste structure of the dish. When shopping for rice vinegar, I prefer rice vinegar which is less acidic or sharp, with a faint aroma of the fermented rice, and pure. Mizkan Rice Vinegar is made from 100% rice and naturally fermented. It’s mild but tangy, and doesn’t have an overpowering taste when used for cooking. It’s also the preferred brand in the food services industry and Japanese restaurants.
Cooking Tips for Rice Vinegar
When I first started cooking Japanese at home, my Japanese friend shared the following tips with me:
As rice vinegar vaporizes quickly, add it towards the end of the preparation.
The acidic taste of rice vinegar can be used to balance the sodium level (saltiness) in a dish.
Rice vinegar can be used to rid the fishy smell in fish. Add a dash of rice vinegar when you are cleaning fish.
Certain fish tend to have slimy skin. Use rice vinegar to wash it off for easy handling.
Rice vinegar prevents discoloration in food, for example: eggplant. Add a little rice vinegar during the preparation and cooking process will help retain the natural color of the ingredients.
Sushi
When it comes to Japanese cuisine, the first thing that comes to mind is sushi. Rice is the staple in Japanese cuisineevery meal is served with rice. As such, rice is vinegared with rice vinegar to create sushi rice, which is the essential ingredient in all sorts of sushi.
If you learn Japanese cooking at home, the very first Recipe that you will attempt is probably how to make great sushi rice. You can refer to my sushi rice recipe where I used a sushi rice seasoning, which is Mizkan Sushi Seasoning. The seasoning is made with rice vinegar and can also be used for Japanese salad (Sunomono) or marinade.
There are a lot more to share about Japanese cooking and this page is barely the start. It will be updated regularly with useful resources and information. It was so snowy in Beijing that our flight was delayed and we had to cancel our show in Wuhan. When we finally got to the club, there were still some stragglers left, so we all just drank beer and played foosball for three hours.
Afterwards, this food. Very exciting. Street vendors open practically all night, roasting little snacks on smoky fire-pits, whipping you up the coolest fried rice on demand. We had grilled lotus root, mushrooms, bread, eggplant, and rice for something like Ǿ cents.
Food is a source of energy and other nutrients to support human life. But food can also become a vehicle for human health nuisance elements, which form a natural element that has become part of the food, and went into the food in a certain way. In general, the danger arising from the food is often referred to as food poisoning. Hazards may occur through the elements of microorganisms, chemical or natural. The disease is caused by the above three elements are classified into three types, namely:
1. Food related diseases caused by microbes that contaminate food and entering the body, then live and multiply, and cause infection in the digestive tract (food infection). 2. Food related diseases caused by poison / toxin produced by microbes in the food (food poisoning). Genesis intoxication is not always accompanied the entry of microbes into the body. 3. Diseases caused by food are not microbes, but the chemicals and natural elements.
Microbiological Hazards
Microbes are everywhere, both in soil, dust, water or air. Most of these microbes are harmless, but many also can cause infection in humans and animals. In certain circumstances the microbes can multiply and infect the body tissue and can spread between humans to humans, animals or animals with contagious from animal to human or otherwise, directly or through food. Food becomes toxic because it has been contaminated by certain microbes, and microbes that produce enough toxins that may harm consumers
Bacterial Infections
Food is generally the source of infection and poisoning by food bacteria are classified as low acidity like meat, eggs, milk and their products. Which includes bacteria that cause food infections include Salmonella, Clostridium perfringens, Vibrio parahaemolyticus, Escherichia coli, Bacillus cereus, and Vibrio cholerae.
Salmonella
Salmonella can be found in food because of contamination. Some sources of contamination include animal waste during cutting, feces, or from water polluted wastewater containing Salmonella. Contamination can also occur indirectly, such as food contamination by Salmonella by human hands or tools used.
Salmonella found in poultry and eggs, flies, mice and cockroaches. Turkeys, ducks and geese can be infected by different types of Salmonella which can be found in feces, eggs and so on. Products such as whole egg, egg powder and liquid eggs, need special attention because of potential as a source of Salmonella. Other food contaminated with Salmonella often is the fish meat and milk and processed products such as sausage, ham, smoked fish, fresh milk, ice cream, chocolate milk.
Salmonella poisoning symptoms are fever, headache, diarrhea, and vomiting. The incubation period from 5 to 72 hours, usually Ǭ to 36 hours after eating foods containing Salmonella.
Clostridium perfringens
Diseases caused by these bacteria is gastroenteritis (intestinal disorder), with symptoms such as abdominal pain, diarrhea, and the formation of toxic gases released from the digestive tract. The bacteria are relatively sensitive to heat and can deactivated at 60 ° C for 10 minutes. Symptoms occur within 8 – 24 hours after eating foods that contain these microbes.
Clostridium perfringens are scattered in the chicken and beef cooked. Other foods that may be contaminated are fish, poultry, dairy products, dry foods, soups, gravies, spices, gelatin, spaghetti, pasta, flour and soy protein.
Vibrio parahaemolyticus
Outbreaks of gastroenteritis by Vibrio parahaemolyticus common in Japan due to the consumption habits of the people contaminated fish and other sea products are raw. Seafood such as fish, shellfish, crabs, and shrimp are common foodstuffs infected with Vibrio parahaemolyticus.
The incubation period from 2 to 48 hours, usually 12 hours. Symptoms that arise are abdominal pain, diarrhea (watery feces and contain blood), nausea and vomiting, mild fever, and headache. Patients will recover after 2 – 5 days.
Escherichia coli
These bacteria normally (komensal) present in the bowel tract / small children and healthy adults and the number could reach 109 CFU / g. These bacteria are known as microbial indicators of faecal contamination and are divided into two groups, namely non pathogenic and pathogenic. There are four groups of pathogenic causes of diarrhea, namely EPEC (Enterophatogenic Escherichia coli), ETEC (Enterotoksigenic Escherichia coli), EIEC (Enteroinvasif Escherichia coli) and VTEC (verotoksin producing Escherichia coli).
Disease caused by EPEC group is watery diarrhea accompanied by vomiting and fever. Diarrhea often is cured itself, but EPEC can cause prolonged chronic enteritis that interfere with growth. EPEC is generally associated with babies and children under the age of 3 years.
Disease caused by ETEC is watery diarrhea with abdominal cramps, fever, malaise and vomiting. In very severe forms of infection by ETEC strains can produce a clinical picture that resembles diarrhea caused by V. cholerae, the rice water stool. ETEC is a major cause of diarrhea for infants in developing countries and diarrhea in people who are traveling from winter climates with good hygiene standards to tropical regions with hygiene standards are lower.
EIEC group causes diarrhea resemble clinical basiler often caused by Shigella. Initially acute diarrhea and watery, accompanied by fever and stomach cramps, continues until the phase of the colon (large intestine) with bloody stools and mukoid. Not all EIEC infection phase continues until the colon, so the blood does not always detected in feces. EIEC attack colonic mucosa and multiply in the cell-cell spread to neighboring cells after the cells are infected through lysis.
VTEC causes hemorrhagic colitis (HC) and hemolytic uremik syndrome (HUS). HC Symptoms often begin with abdominal pain and watery diarrhea followed by bloody diarrhea without fever generally. Well bloody diarrhea or not, followed by the emergence of HUS. HUS occurs in all age groups but most common in children. VTEC is the tool of the intestinal tract of cows and other animals.
Contamination of food derived from food manager or employee from contact with water containing human waste. Infection of healthy adults need a dose of at least 108 cells either through food or water contaminated.
Bacillus cereus
Bacillus cereus causes gastroenteritis in humans. The symptoms of nausea, stomach cramps, watery diarrhea, and vomiting for one day or less. Food is often contaminated serelia, flour, spices, starch, puddings, sauces, and fried rice.
Vibrio cholerae
Vibrio cholerae causes cholera outbreak, while the van Eltor Vibrio cholerae causes cholera disease eltor. The way it works is by attacking the intestinal lining and causes diarrhea and vomiting. Transmission of these bacteria through the water, fish and seafood.
Food intoxication due to Bacteria
Type of bacteria that cause food intoxication is Clostridium botulinum, Staphylococcus aureus, and Pseudomonas cocovenenans. Toxins produced by bacteria more heat resistant than the bacteria itself.
Clostridium botulinum
Poisoning is caused by bacteria called “botulism”. Toxins produced can cause death. Symptoms begin with an acute indigestion, nausea, vomiting, diarrhea, mental and physical weakness, dizziness and headaches, vision turned into two, difficulty in swallowing and speaking, the muscles become paralyzed and death is usually due to difficulty in breathing. In fatal cases, death can occur from 3 to 6 days.
Intoxication generally occurs in low acidity canned food. Canned food that causes botulism is often sweet corn, beets, asparagus and spinach. Botulism also may occur in smoked fish.
Staphylococcus aureus
Symptoms of poisoning Staphylococcus aureus is a lot of saliva, nausea, vomiting, abdominal cramps, bloody diarrhea and mucus, headaches, muscle cramps, cold sweats, weakness, shortness of breath, body temperature below normal. These symptoms lasted 1 2 days, death is rare.
Especially the human nasal cavity contains many sinusitis sufferers staphylococci, as well as with ulcers and suppurating wounds are a potential source. Patient dairy cow mastitis (infection of the udder) to transmit staphylococci in milk.
Bacterium S. aureus that has been entered into the food, can be turned off by heating the cooking time, but the toxins they produce can only be unraveled if the heating for several hours, or heated at a temperature of 115 ° C for 30 minutes. Poison Mushroom
Mushrooms poison is sometimes difficult to distinguish from edible mushrooms, so those who do not know the characteristics of plants often taken the wrong mushrooms poisonous mushrooms that cause food poisoning and can cause death.
Several types of poisonous mushrooms which resemble the mushroom Amanita muscaria that produce toxins and muskarin Amanita phalloides mushrooms that produces toxins phallin. The incubation period is relatively quick between 15 minutes to 15 hours. Symptoms of mushroom poisoning are abdominal pain, thirst arises, nausea, vomiting, diarrhea, body becomes weak, sometimes accompanied by tears and can end in death.
Jengkol
Jengkol derived from plant origin lobatum Pithecolobium usually consumed in the form of emping jengkol, as a vegetable side dish and as a lalap jengkol raw form. Jengkol can cause poisoning if consumed too much. Jengkol have distinctive odor that is not delicious. The cause of poisoning is jengkolat acid. Jengkolat acid crystal form roset needles, easily soluble in acid or alkaline, soluble in hot water, hardly soluble in water, which can cause blockage in the urinary tracts and disruption of renal function.
Symptoms of poisoning is jengkol flatulence, nausea, sometimes accompanied by vomiting and unable to defecate. Arising pain (colic) in the waist or around the navel and sometimes accompanied by seizures. Urine little peculiar smell jengkol, sometimes mixed with red and white like rice washing water in the urine because there are red blood cells and white blood cells and in severe poisoning jengkol can not urinate at all because the channel is blocked by crystal urine jengkolat acid.
Cassava Poison
The cause of poisoning cyanide cassava is found both in leaves and cassava tubers. Cyanide would inhibit the transport of oxygen by red blood cells. Cassava poisoning symptoms such as cyanide poisoning is usually nausea, vomiting, dizziness, difficulty breathing and had to draw a deep breath, rapid heartbeat, and then passed out and could end in death.
Toxic Fish
Several types of sea fish and fresh water found in the internal organs contain toxins that can cause death to the victim of poisoning. Poisonous fish is the famous fish wrapping. Scallops, Shrimp Toxic
Certain types of oysters known to contain toxins that attack the nerve (neurotoxin) and these toxins are not destroyed by heat. I like to get a similar combination to the above whenever I step into Whole Foods Market.
Today I decided to go for the Asiago Black Pepper Bread , a tasty treat that has a nice crust, a chewy crumb, a lovely cheesy taste, a kick of mild heat and topped with a layer of cheese. I usually stop by the prepared foods section and pick up my fave chili lime basil tofu and the quinoa & sweet potato salad with fresh spinach. The former is coated with aromatic spices blended with maple syrup and zesty lime juice, and contains firm toothsome cubes of firm tofu and refreshing crisp broccoli spears. The latter is a sweet blend of nutty quinoa, sweet starchy sweet potato, slightly tannic spinach and slivers of almonds tossed in a ginger-orange vinaigrette. Yum!
To round out things, I also noticed a new product (I’m always on the alert for new snack products to test out) to munch on; pita chips in pesto and cinnamon sugar flavours.
If only the weather were nicer, I’d have eaten this all out on a nice park bench instead of in the comforts of my own home.
My two-month vacation here in Penang, Malaysia is coming to an end. Before I leave, I wanted to share a very delicious Recipe with you (a specialty of my second sister who is an excellent cook )âCurry Fish Head. For sure, I am going to miss this dish when I return to the United States because some of the key ingredients such as bunga kantan is not available. Furthermore, it’s impossible to find very fresh fish head to prepare this dish…
This Curry Fish Head recipe is essentially a Nyonya ikan tumis recipe, but made with Garoupa fish head so I would call this a Nyonya CurryFishHead as there is no curry powder and curry leaf used. Regardless, it’s a mean pot of curry and goes very well with steamed white rice, and this is just one example of the type of dishes we eat in Malaysia. Please take note that this recipe is in metric measurement for easy reference. Enjoy!
600g Garoupa Fish Head, chopped into pieces
1 tablespoon tamarind pulp + 1/2 cup water
3-4 tablespoons oil
2 cups water
Bunch of polyganum leaves (laksa leaves)
4-6 okras, cut into halves diagonally
Salt to taste
Sugar to taste, optional
Spice Paste:
1-2 stalks lemongrass, white part only, cut into small pieces
1 small turmeric, skin peeled, sliced into pieces
20-25g dried red chili paste
50g peeled shallots
5g belacan (shrimp paste)
Garnishing:
Bunga Kantan (Torch Ginger Flower), sliced into small pieces
Bunch of mint leaves, optional
Method:
Prepare the spice paste by using a mortar and pestle. First, pound the lemongrass and turmeric together until they become a paste.
Deseed a big handful of dried red chilies. Soak in warm water for about 10 minutes. Pound the dried red chili into a fine paste. You will need about 20-25g depending how spicy you like. Save the unused chili paste in the refrigerator.
Pound the shallots and the shrimp paste together.
Mix the tamarind pulp and water using your fingers, extract the juice out of the tamarind pulp, discard the tamarind pulp and the seeds and save the tamarind juice.
Heat up a pot on medium heat and add the oil. Saute the turmeric and lemongrass before adding the shallots and belacan paste. Continue to stir-fry until aromatic before adding the chili paste. Stir until the oil separates from the spice paste and become red.
Add the tamarind juice into the pot, follow by the water. Bring it to boil before adding the polyganum leaves (laksa leaves) and okra. After the okra is half-cooked, add the fish head. Cover the pot and let cook for a few minutes until the fish is cooked. Add salt and sugar (if using) to taste. Garnish with the bunga kanta and mint leaves. Serve immediately.
Cook’s Notes:
Use one lemongrass if it’s a big lemongrass and two if the lemongrass is thinner.
Fish head might sound intimidating to many of you, but it’s definitely one of the best parts of a fishâit’s fleshy, tender, and absolutely delicious. Curry Fish Head is a popular dish in Malaysia and Singapore.
I love mushrooms for as long as I can remember, even when I was a little kid. I love mushrooms of all sorts, shiitake, button, enoki, straw mushrooms—canned or fresh. One of the great things about the United States is that I can get fresh mushrooms easily. They are readily available at the market…
Whenever I get some fresh shiitake mushrooms at the market, I always make this Japanese-style braised mushrooms with dashi and mirin. The end result is a very simple side dish that is absolutely umamilicious. You will know what I mean if you attempt this braised mushroom recipe at home.
Add all the ingredients (except the mushroom) into a saucepan with a low to medium heat. As soon as it bubbles, add the mushrooms into the saucepan.
Cook until the dashi reduces to about half the original quantity, by then, the dashi stock would become slightly sticky because of the mushrooms. Turn off the heat, let cool. Cut the mushrooms to thin slices. This dish is best when served cold or at room temperature.
