My first ‘nice’ cutlery set

25 November, 2010 (12:15) | How to cook Chinese Food | By: admin

Hey all,

Haven’t posted here in a even though! So, appropriate now, there’s a Zwilling JA Henckles sale appropriate now on Gilt Groupe. various sets are sold out already, but I was in a position to get the 15-piece Twin Gourmet block set for $150 ( it is $490 retail).

Which brings me to my question…

As a 20something who’s just beginning to develop a kitchen for myself, very good cutlery is 1 factor I’ve been seriously lacking. Just to have knives, I bought a inexpensive set from Marshalls or Ross, and they’re just… blunt, and so hard to make use of. I observed 1 Henckles paring knife at a TJ Maxx 1 time (for $10!) and it produced cooking so considerably less complicated for me… I use it for things I shouldn’t use a paring knife for, just since those other knives are not as much as the process.

So, do you assume this is often a very good starter set for an individual like me, who’s prepared to toss out the cheapo knives but not really prepared for a pro-grade set? it is my understanding that their Gourmet line is far more cost-effective than their Cuisine line, so I really feel comfy about this buy as a good strategy to segue into having good things in my kitchen with out going overboard :)

Here’s what I got within the set –

TWIN Gourmet Block Set:

consists of:
*One paring/utility knife, blade measures four inches in length
*One serrated paring knife, blade measures five inches in length
*One bread knife, blade measures 8 inches in length
*One chef’s knife, blade measures 8 inches in length
*Eight steak knives, blades measure four 1/2 inches in length
*One set of kitchen shears, measuresಊ 1/4 inches in length by three 3/4 inches in width
*One sharpening steel, measures 9 inches in length
*One hardwood knife storage block, measures 10 inches in length by five 1/4 inches in width by 9 inches in height

Does that sound like an excellent strategy to begin?

Waterless kitchenware lids are a lot heavier than traditional kitchenware lids, which offers the vital weight to develop and maintain a excellent seal. Some lids have a valve to generate a whistle when the temperature has reached a certain point. This valve isn’t on all lids, and isn’t needed to effectively cook with waterless kitchenware.

Chili Crab

25 July, 2010 (11:30) | How to cook Chinese Food | By: admin

crab
(This chili crab recipe is from my archive but I have just made it these days and updated with new photos, shot with Canon T1i. The new Canon 5D Mark II is reserved for my cookbook.)

My mother was a fantastic cook. Coming from a little fishing village in the state of Kedah, she produced killer dishes with seafood, specially chili crab. With this post, I give my utmost tribute and applause to my late mother for her cooking skills and this quite special family Recipe.

Growing up, I would usually look forward to visiting my mother’s hometown; as a matter of fact, I would ask my parents to take me there. My intentions were not completely pure, I should confess; other than being able to play on the beach and dig siput (a type of clams), my bigger motivation was that she would bring back the freshest, meatiest, and juiciest catch of green mud crabs from my uncle who was a fisherman. I was constantly brimming with excitement at the thought of devouring this dishâ€(get chili crab recipe after the jump)

Eating home-cooked chili crab was a celebration in my family”the preparation (imagine “capturing” those feisty crabs that “escaped” the nets and roamed freely within the kitchen!), the cooking, and of course, the eating. It was sheer fun; lots of fun.

While this dish is traditionally prepared with green mud crab in Malaysia, I applied a 2-lb Dungeness crab. In case you can’t locate green mud crab or Dungeness crab in your area, you’ll be able to often use one more crab—stone crab or blue crab. If you are in New York City, call yourself lucky as it is possible to just hop straight to Fatty Crab from the meat packing district and order this dish. Chef Zak Pelaccio’s serves a Malaysian-style chili crab at his restaurant.

Feast your eyes now with my pictures, but I hope you get a chance to try this chili crab recipe. Please take note that this chili crab recipe is not Singaporean-style chili crab which is produced with a tomato-based sauce; this is adapted from my family’s chili crab recipe.

Grilled Enoki Mushrooms Wrapped with Smoked Chicken Breast

15 July, 2010 (03:26) | How to cook Chinese Food | By: admin

Right now, my quest for smell-friendly food continues with grilled Enoki mushrooms wrapped with smoked chicken breast. Inspired by Japanese yakitori, these grilled Enoki mushrooms are light, juicy, and appetizing–thanks to store-bought smoked chicken breast deli slices along with the nice presentation. Lightly charred on the surface but still moist in the core, popping these little bites into my mouth was indeed satisfying.

Although I applied chicken breast, any deli meats would work–turkey, sliced ham, bologna, or even bacon. Aside from the easy ingredients, these little hors d’oeuvres have the additional bonus of grilling in just minutes. Now this is what I call no-hassle food.

Make them at house or for your next party; I can assure you that this recipe will likely be a crowd-pleaser!

Yakitori (Japanese Grilled Skewered Chicken)

15 July, 2010 (03:24) | Chinese Food Pictures, How to cook Chinese Food | By: admin

delicious
A single of my favorite points to do around the weekends is having dinner with very good buddies at a Japanese izakaya or yakitori restaurant. The casual gastro-pub settings along with the scrumptious fares offered at these establishments have had me hooked given that my 1st trip to Tokyo several years ago.

My favored items at izakaya are none other than the mouthwatering, hot-off-the-grill yakitori (焼き鳥)—assortment of grilled chicken and chicken offal skewers cooked over charcoal fire. Whenever I go to yakitori, I generally request the seats right in front from the grill. I love watching the yakitori masters preparing the chicken skewers. They’re ever so patient and dedicated, constantly turning and checking within the yakitori, using scissors to cut out the burnt bits, and precisely applying salt or tare sauce to the skewers. Their attention to details and perfection fascinates me to no end, and I reckon that’s the very reason why Japanese cuisine is so sublime…
chicken
Here is my version of yakitori, or Japanese grilled skewered chicken. While yakitori is grilled with salt or tare sauce (a sauce made of sake, mirin, soy sauce, and sugar), I opted for a two-in-one combination, with both salt and tare sauce. I also employed dashi shoyu or dashi soy sauce rather than plain soy sauce. I really enjoyed my creation. If you like yakitori, do try out my recipe, they will be fantastic for the upcoming summer parties!

YAKITORI (JAPANESE GRILLED SKEWERED CHICKEN/焼き鳥)

INGREDIENTS:

one lb boneless and skinless chicken leg meat (cut into bite-size pieces)

Scallions (white part only, cut into 2-in lengths)

Bamboo skewers (soaked prior to grilling)

Sea salt

Togarashi

YAKITORI TARE SAUCE

1/4 cup dashi soy sauce or dashi shoyu

one tablespoon sake

1 tablespoon mirin

one teaspoon corn starch one tablespoon water (to thicken the sauce)

Method:

Add all the ingredients in the tare sauce into a small sauce pan and bring it to boil. Transfer out to a tiny bowl and set aside.

Thread 3 pieces of chicken meat onto a bamboo skewer, separating each piece with the scallion.

Heat up a BBQ grill or indoor grill and place the skewers on top on the fire. Sprinkle a wee bit of salt sparingly on the surface with the chicken. Turn the skewers and do the same on the other side. Keep turning the chicken to make sure they are cooked/charred evenly. When the chicken is almost done, dip the chicken skewer into the tare sauce and grill it for about 30-40 seconds on both sides. Serve instantly.

COOK’S NOTE:

I love eating my yakitori with bottled togarashi, mixed chili pepper for an extra kick.
