Tandoori Chicken

Indian cuisine is renowned far and wide for its rich flavors and generous use of bold spices. However there is one particular Indian dish that has gained prominence not just for its bold flavors but for its cooking method as well. And that is none other than the world-famous Tandoori Chicken. The name Tandoori Chicken is derived from the “Tandoor”, which is a cylindrical clay oven that was traditionally used to cook the chicken in at very high temperatures.

This ingenious method of cooking is still widely practiced today. But of course with modern technological advances, gas and electric tandoori ovens are more efficient in getting the job done. However if you are preparing this dish in the comfort of your own home, you can still achieve amazing results with a BBQ grill or alternatively, broiling in a conventional oven. My personal preference is to pre-bake the chicken ahead of time to ensure it will be thoroughly cooked. Then give it a quick sear at high heat in the broiler for that charred taste and at the same time sealing in the flavor and tenderness.

Tandoori Chicken

The other key factor to a truly amazing tasting Tandoori Chicken is the marination. The rich blend of spices gives the Tandoori Chicken its unique flavor but more importantly, it is the yogurt that helps to penetrate the spices into the meat and tenderize it at the same time. And the best part of it is, even when the meat hits the grill, it is the thick consistency of the yogurt that keeps the seasonings on the meat so no flavor is lost.

Chinese Chicken Salad

Just like its cousin the fortune cookie, the Chinese Chicken Salad did not originate from China and is certainly not a part of authentic Chinese cuisine. Even the Chinese term for salad (²™æ pronounced sha la) is derived from the pronunciation of the English word. So what is it that makes the Chinese Chicken Salad Chinese? The ingredients, of course!

Ingredients commonly found in Chinese cooking like soy sauce, sesame oil, and ginger and toasted sesame seeds are used to make the dressing. Popular toppings for the Chinese Chicken Salad include crispy noodles, fried wonton skin strips, chinese mushroom, mandarin orange, grilled tofu and almonds. But of course you can mix and match these according to your preference. The end result is a light and healthy salad perfect especially to complement a heavy meal.

Chinese Chicken Salad

This classic east meets west salad can be found at classy joints like Wolfgang Puck’s or Madam Wu’s but why pay through the nose for a dish so simple you can toss up as much as you want in the comfort of your own kitchen, especially since the dressing is vinaigrette-based and can keep longer in the fridge than mayonnaise-based dressings.

Sesame Noodles

March, which also happens to be National Noodle Month is drawing to a close and I have just the noodle dish to end the celebration with a bang – Cold Sesame Noodles. This noodle dish of Sichuan origin is perfect for springtime and summertime, especially when it starts to get hot working in the kitchen. It is also a refreshing idea for any party or gathering because the ingredients are very simple and the dish does not require re-heating. Yet the rich, savory taste of the sauce will make everyone’s tastebuds do the limbo and they will be conga-lining up to get your recipe in no time.

Sesame Noodles

The main ingredients that pack the sauce full of wallop are sesame oil, sesame paste, red chili oil, sweet soy sauce, creamy peanut butter and rice vinegar. The amounts I listed in my recipe are perfectly attuned to my liking. However, just as with salad and dressing, please feel free to adjust the above ingredients to your own preference. One great feature about this noodle dish is it is ready to be served as is or you can make it even more impressive by adding chicken strips or fried tofu or whatever your mood fancies.

Malaysian Style Beef Satay with Spicy Peanut Sauce

As I have mentioned in my Beef Panang post, I have saved a couple of juicy pieces of top sirloin sponsored by my friends at TX Bar Organics for an upcoming recipe, which is this one. Top sirloin is a very versatile cut of beef that can be enjoyed as a nice juicy piece of steak, sliced up for a beef stir-fry, or diced up, skewered and grilled ala shish kebabs or satay. Since I am in the mood for an appetizer, I decided to use it to make some Malaysian-style Beef Satay.

I would say Satay is undisputably Malaysia’s “King of Street Foods”. It is enjoyed by people from all walks of life, regardless if you is looking for a light appetizer or a complete meal. Just as Ampang is famous for Yong Tau Foo and Klang for Bak Kut Teh, Kajang is another town in the State of Selangor that is famous for a signature street foodSatay. Kajang Satay is renowned for it’s signature Satay sauce and slightly larger portion of meat among other secret ingredients used that have yet to be made public. I am sure it’s a closely guarded family secret just like KFC’s 11 herbs and spices. Anyway, nowadays you don’t have to make a special trip to Kajang just for the Satay as more and more Kajang Satay outlets are springing up all around Malaysia. Grass-fed Beef Giveaway

TX Bar Ranch is located in Northern California 120 miles north of Sacramento and their USDA organic beef is excellent and grass-fed:

Thai Panang Curry with Beef

When I requested my friends at TX Bar Organics, North Cal for their most suitable cuts of organic grass fed beef to showcase my Thai beef Panang curry post, they instantly delivered several choices, all beautifully vacuumed-packed in an ice box, and distinctively labeled. After careful deliberation, I decided on chuck roast (click on the picture gallery above), which by the way is excellent not just for Panang curry, but any braising recipe as well. Coming in close was a tender juicy piece of top sirloin, which I can’t wait to share with you in my next beef Recipe post.

The name of the curry – Panang/Phanaeng, originates from my hometown, the beautiful island of Penang on the west coast of Malaysia. Spices commonly used in Malaysian curries (coriander and cumin) are shared in this Thai curry, along with other aromatic herbs (kaffir lime leaves, lemongrass, galangal, etc.). An authentic Panang curry is fried in thick coconut cream as opposed to boiling, as in the Red curries, providing a thick, creamy, soup-like gravy. And in most Thai restaurants, beef is the most famous choice, best suited for a Panang curry. Because of its  bursting savory spice ingredients, with a touch of roasted peanuts and cilantro roots, this is usually the more popular version than the regular Thai curries (Green, Yellow, Red, Massaman). Aside from that, this is also one of the creamier, rich and mild spicy curry which is easier to take on with a bowl hot steamed Jasmine rice.

Thai Panang Curry with Beef

The last time I cook Panang was with chicken, and I kept it simple using a can of off-the-shelf Panang curry paste. So, what better way to showcase this delightful fresh organic grass fed beef  with some good home-made Panang curry paste? If you enjoy making some good old-fashion curry paste, like I did with my usual suspect, ie. Rendang with beef,  making Panang curry from scratch is most certainly very easy, a definite must-try to your perfect Panang curry beef.

Met my long time blog friend Austin Bush of Real Thai this afternoon, who came to Malaysia on an assignment for the Lonely Planet guidebook. We had Char Kuey Teow.

When it comes to hawker food (street food), real foodies know that Malaysia owns it. And when it comes to really good hawker food, Penang owns it. Enough said.
